The finest Oscietra caviar, with its incomparable large amber or gray grains (2.9mm in diameter), comes exclusively from the roe of the middle-aged (over 10 years old) Acipenser gueldenstaedtii sturgeon. It is a medium-sized species of sturgeon, exceeding 1.5 meters in length, 100 kilograms in weight and 40 years of life. Oscietra caviar has a range of shades, rich consistency, percussive texture, unique roasted walnut and hazelnut flavor and aromatic aftertaste.
